The body of water where the oyster comes from influences the flavor. East and west coast U.S. oysters are very different. East coast oysters tend to be smaller, milder and saltier. West coast oysters are more on the creamy side with a sweet flavor. One of my favorites is the Pine Island from Oyster Bay Long Island. They are mild, plump and firm. Bring in a dozen with cocktail sauce, horse radish and an ice cold beer please!
